Homemade Pizza (Dough via Alyssa)

Preheat oven to 350 degrees



3 C flour

1 TBS yeast

1/4 C sugar

1/3 C oil

1 1/3 c warm water

1 tsp salt

Mix dough together.  I split in half and place on 2 different cookie sheets.  

Place in oven for 5 minutes.  Pull out and add toppings.

Add toppings:

Raos's marina
Mix of mozzarella and cheddar
pepperoni
Olives
Sautee red onions
Cook up some spicy sausage (add banana peppers)

Hawaiian: 
Pineapple and canadian bacon

Bake for 25-30 minutes

Beef and Broccoli Noodles Recipe from Kitchn.com

IngreDIENTS

  • ounces 

    dried udon, ramen, soba, lo mein noodles, or spaghetti

  • large crown broccoli (10 to 12 ounces)

  • cloves garlic

  • (1-inch) piece fresh ginger

  • 1 1/4 cups 

    low-sodium chicken broth, divided

  • 1/4 cup 

    reduced-sodium soy sauce or tamari

  • tablespoons 

    oyster sauce

  • tablespoon 

    honey

  • 2 TB brown sugar

  • tablespoon 

    cornstarch

  • tablespoon 

    olive oil

  • pound 

    lean ground beef

  • 1/2 teaspoon 

    kosher salt, plus more for the noodles

  • 1/4 teaspoon 

    freshly ground black pepper

  • Thinly sliced scallions, for garnish (optional)

  • Toasted sesame seeds, for garnish (optional)

INSTRUCTIONS

  1. Bring a large pot of salted water to a boil. Add 8 ounces dried noodles of choice and cook for 2 minutes less than the package instructions. Drain and rinse well under cool water.

  2. Cut 1 large broccoli crown into 1-inch florets (about 3 cups). Mince 2 garlic cloves, and peel and mince 1 (1-inch) piece of fresh ginger (about 1 tablespoon). Place the garlic, ginger, 3/4 cup of the low-sodium chicken broth or water, 1/4 cup reduced-sodium soy sauce or tamari, 2 tablespoons oyster sauce, 1 tablespoon honey, and 1 tablespoon cornstarch in a medium bowl and whisk to combine.

  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add 1 pound lean ground beef and season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Cook, breaking up the meat into medium pieces with a wooden spoon, until browned and cooked through, 5 to 7 minutes.

  4. Add the broccoli and remaining 1/2 cup low-sodium chicken broth or water. Stir to combine, cover, and cook until the broccoli is vibrant in color and barely crisp-tender, about 3 minutes. Whisk the sauce once more to combine. Add the sauce and the noodles to the skillet and cook, tossing regularly, until the sauce is thickened and coats the noodles well, 2 to 3 minutes. Garnish with thinly sliced scallions and toasted sesame seeds if desired.

Cube Steak and Rice

 Cube steak
Roll in egg, flour and seasoning.  

Fry in skillet until browned and thoroughly cooked.  

Add a can of tomato soup and a small can of tomato sauce.  Stir well and heat until boiling. 

Serve over cooked rice.

Cheeseburger pie

 We’ve eaten this a few times, but for some reason this time just tasted better.  Was it the cream?  The cheese?  🤷‍♀️  Actually, it might have been the onion soup packet I added, instead of the other spices.  It was fattening (THM-S meal) and delicious served with a salad.  

I tweaked the recipe a little.  I used 1lb of ground turkey and 1 lb of ground beef.  Everything else was the same.

Baked Ziti for a Crowd

This is a delicious recipe merging sweet, savory and a little bit of spice.  I have adapted it from the Church Mouse blog.



Baked Ziti for a Crowd

Ingredients:
2lbs pasta (ziti or rotini)
6 c. Marinara sauce (I used and loved Rao’s)
1 lb ground Italian sausage (add another 1lb if serving a lot)-this made the dish!!
6 c. shredded Mozzarella, divided
2lb ricotta cheese
1TB dried basil
1 tsp. Salt
1/2 tsp pepper
1/4c grated Parmesan cheese

Directions:
Preheat oven to 350*.  Cook time:40 minutes

1.  Cook pasta according to package.  In another pan, brown the sausage.
2. Drain pasta and layer 1/2 of it on a sprayed baking dish.  I used a roasting pan for extra size and it was perfect.
3.  After the meat has browned, add the pasta sauce in the pot to warm up.
4.  Layer over the noodles.
5.  In a bowl, mix the ricotta cheese (2lbs), mozzarella cheese (2 c), basil (1 TB), salt (1tsp), pepper (1/2 tsp) and Parmesan cheese (1/4 c).
6.  Drop by spoonfuls on top of meat and sauce mixture.
7.  Layer remaining pasta on top.  Cover with the remaining cheese.
8.  Put a layer of foil over.
9.  Bake 30 minutes.  Remove foil and bake additional 5-10 minutes.

IP Taco Soup Whole 30 compliant

1lb ground turkey
1 onion, chopped
2 cans (28oz) stewed tomatoes
1 can (14oz) tomato sauce
1 can corn—-remove for Whole30 compliant
2 beef bouillon




  • 2 tbsp chili powder
  • 2 tbsp cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp ground pepper

1.  Sauté ground turkey and onion in instant pot.
2.  Add 1/2 of the seasoning and stir well.
3.  Add the rest of the ingredients
4.  Press soup function for 4 minutes.

Serve with sour cream, cheese and tortilla chips.

Instant Pot Thick Chicken Chili

*base recipe from Lindsay Brin,  but tweaked for instant pot and family preference*

4 Chicken breast
1 C water

2 15 oz black beans,  drained and rinsed
1 15 oz great northern beans,  drained and rinsed
1 4 oz can green chilies, mild

2TBS taco seasoning
2-5 chicken bouillon (depends on amount of water in pot)
Sprinkle of collagen

Dollop of sour cream



Place chicken and water in instant pot.  Poultry setting for 10 minutes.  After time, let sit 5 minutes and quick release valve

Open up lid,  add black beans, great northern beans, diced chilies, and seasoning.
Place lid back on and push chili button.  Set timer for 4 minutes.
Quick release.  
Add a dollop of sour cream

Biscuits & Gravy (THM)

Biscuits
  1 C. baking blend
  3 TB. cold butter
  2 tsp. baking powder
  1/4 tsp salt
  1/2 c. + 2 TB almond milk
  1/2 c. shredded mozzarella
  1 egg
  1/4 c. egg whites

1) Preheat oven 375.
2) Blend baking blend, baking powder & salt
3) Cut in butter w/pastry cutter
4) Add remaining ingredients and stir until just incorporated
5) Drop onto parchment paper
6) Bake 10-12 min or golden brown


Gravy
  1 1/2 lb sausage
  1/2 c. baking blend
  1 1/2 c. almond milk
  1/2 c. heavy whipping cream
  1/2 tsp. salt
  1/4 tsp. pepper

1) Brown sausage, don't drain.
2) Sprinkle baking blend and stir
3) Add rest of ingredients
4) Bring to boil, reduce and simmer 10 minutes
