We’ve eaten this a few times, but for some reason this time just tasted better. Was it the cream? The cheese? 🤷♀️ Actually, it might have been the onion soup packet I added, instead of the other spices. It was fattening (THM-S meal) and delicious served with a salad.
I tweaked the recipe a little. I used 1lb of ground turkey and 1 lb of ground beef. Everything else was the same.

Hamburger Broccoli Casserole
I didn't have all of the ingredients from the original recipe (listed below), so here are my adaption to this recipe:
1 1/2 lbs. ground turkey (I added some chili pepper flakes in place for the sausage)
Sprinkle of Oregano
1 small onion, chopped
1 clove garlic, minced
Frozen broccoli, cooked in microwave for 6 minutes
Cheese (I only had cheddar, but they recommend mozzarella)
Alfredo sauce:
1/4 c. butter
1 c. heavy cream
1 clove garlic, minced
1 1/2 c. paremesan cheese
Brown turkey in a pan. Add in oregano, onion and garlic. Drain excess fat and season with salt and pepper.
I microwaved broccoli in the microwave during this time and started on the Alfredo sauce.
Heat butter on medium heat. add in cream and cook for 5 minutes, while whisking to keep from burning.
Put turkey in a greased casserole dish. Add the broccoli on top, Alfredo sauce and then cheese

Sweet & Sour Meatballs
15-20 Meatballs (can be bought frozen at Costco or Sam’s)
½ c. sugar
1 Tbls. cornstarch
20 oz can pineapple chunks, reserve juice
6 Tbls. vinegar
1 beef bullion
1 tsp. soy sauce
½ tsp. ginger
Rice
-In a 2 quart sauce pan, mix sugar and cornstarch well. Stir in pineapple juice from the can and all other ingredients, except pineapple. Bring to a boil.
-Add frozen meat balls and simmer for 15 minutes. Add pineapple chunks and simmer for 5 more minutes.
-Serve over rice.

Walking Tacos
2 Tablespoons extra virgin olive oil
1 medium onion, chopped
6-8 little sweet peppers or 1 green and 1 red bell pepper, chopped
4 cloves fresh garlic, minced
1 lb lean ground beef (I omit to make vegetarian)
Pinch of kosher salt and black pepper
2 cans diced tomatoes
1 Cup Herdez Salsa or your favorite salsa
1 small can tomato paste
1 Cup warm water
3 cans of beans, drained (I use only black beans)
1 can black olives sliced
2 Tablespoons chili powder
1 Tablespoon ground cumin
1 Tablespoon hot sauce, Tabasco
1 Tablespoon fresh lime juice
Pinch of Kosher salt, fresh cracked black pepper and Lawry’s Garlic Salt with Parsley (to taste)
1/2 Cup fresh chopped cilantro
Bags of Fritos OR DORITOS (1st time bought individual bags, but have since just bought a big bag)
Shredded cheddar cheese
Sour cream
Jalapenos, or green onions
1. Heat oil in a large dutch oven over medium heat. Saute onion and peppers for 5 minutes or until softened. Add garlic and cook for 1 minute.
2.)Add ground beef, salt and pepper. Cook until browned. Drain if needed.
3.) Pour in tomatoes, salsa, tomato paste then stir to combine. Add 1 Cup warm water to thin out slightly then add in beans,olives, chili powder, cumin, hot sauce, lime juice, salt, pepper and garlic salt. I start with just a pinch of salt then keep tasting until it’s to my liking.
4.) Reduce heat to low to simmer until ready to serve.
5.) Open bags of fritos. Spoon in chili, cheese, sour cream and jalapenos. Stick a fork in it and eat!!
-Put the doritos to the side, crush them on top or the kids eat their chili with the chips (instead of utensils! :)

Easiest Crock pot Lasagna EVAH!
1 jar spaghetti sauce (24oz). You can always make your own, but we are going for the easiest lasagna evah!
1/4 c. water
1 container of cottage cheese (16oz) or ricotta cheese
1 box of lasagna noodles
1 bag of shredded mozzarella cheese
1. Spray the crock pot with cooking spray.
2. Mix the water and sauce together. Put some sauce at the bottom of the crock, so the noodles won't burn.
3. Layer: Put uncooked lasagna noodles on top. ( I usually have one noodle in the middle and 1/2 pieces on the side.)
Cottage cheese, sauce, lasagna noodle, cottage cheese, sauce, mozzarella cheese
4. Cook for 4-6 hours. I have made it for longer (8), but it ended up burning around the edges.
*If you have a chance to be home when making it the first time, you can see when it starts to brown too much.

Cowboy Spaghetti
This was strangely fulfilling and good and fattening! :) I omitted some of the meat.
1 pkg. spaghetti noodles
6 slices bacon, chopped
1 lb. ground beef
1 medium onion, chopped
3 garlic cloves, minced
s&p, to taste
2 tsp. Tabasco sauce
1 TB. Worcestershire sauce
1/2 lb deli pastrami, roughly chopped (I omitted)
1/3 c. pepporoni, chopped
2 TB. canned jalepenos, chopped
1/2 c. sliced mushrooms (i omitted)
1 small can diced olives
1/2 c. beef broth (or 1 bouillon cube with 1/2 c. water)
1 (14 oz) can fired roasted diced tomatoes (didn't have, so I used regular diced tomatoes)
1 (8oz) can tomato sauce
sharp cheddar cheese, shredded
green onions, chopped
1. Heat a large deep skillet to med-high heat. Add bacon and fry until crisp. Remove with slotted spoon and drain on paper towels.
2. In the same skillet, add ground beef. When browned, add onions and garliic. Season with salt and pepper, Tabasco, and Worcestershire sauce. Stir in bacon, pastrami, pepperoni, jalapeno, mushroom and olives. Cook. Stirring occassionally for about 5 minutes.
3. Add beef broth and cook an additional 5 minutes. Stir in tomatoes and tomato sauce. Cover and reduce heat to low. (At this point you can put all of this into a crockpot andcook on low a few hours. If it gets too thick, add another can of fire roasted tomatoes and broth.
4. Prepare noodles. Drain well and add to meat sauce.
5. Toss well and serve with cheese and green onions on top.

Stroganoff
This is SO easy!
1 lb. ground beef
1/2 onion
Season well. Brown and drain.

2-4 TB. sour cream (add more if needed)
s&p
1/2 to 1 pkg. egg noodles, cooked
1. Mix beef mixture with soup and sour cream. Season with salt and pepper.
2. Serve over noodles.

2. Stir soup, ketchup, black pepper/salt, peas and carrots into skillet. Spoon mixture into a 9 inch pie plate (or small square pyrex)
3. Heat milk and butter in 2 qt. saucepan. Remove from heat and slowly stir in instant potatoes. (omit if you made your own potatoes)
4. Spoon potatoes over beef mixture.
5. Sprinkle cheese on top
6. Bake at 400* for 15 minutes or until ptoatoes are lightly browned.
*Homemade potatoes:

Cut the potatoes in to cubes

1 (4oz) can chopped green chilies
2 TB white vinegar
1-2 C. shredded cheddar cheese

8 (7 inch) corn tortillas (I used: flour tortillas)
1. Preheat oven to 450*
2. Brown the ground beef, onion, garlic, taco seasoning, and oregano in a skillet over med. heat. (Break up the meat) Drain excess fat. Stir in sour cream, chilies and vinegar until well mixed. Remove from heat and mix in Cheddar cheese.
3. Melt margarine in a small skillet over low heat. When melted, dip each tortilla into the margarine for about 30 seconds or until soft. Place the softened tortilla onto a bakcin sheet, and fill with about 1/3 c. of the meat mixture. Fold the right and left sides of the tortilla over the filling, then the top and bottom, making an envelope that completely encloses the filling. Flip the tortilla seam side down on baking sheet.
4. Bake in oven until the tortillas are crisp abt 15 minutes.
*I haven't tried, but I bet you could sub. chicken instead.

1 lb Ground beef
1 TB. minced fresh ginger (I used: dried ginger)
1/2 c. chicken broth (I used: 1 boullion cube ( and 1/2 c. water)
2 TB. hoisin sauce **Below**
1 tsp. five-spice powder
1/2 tsp. salt
2 heads boston lettuce, leaves separated (I used: romaine)
1 large carrot, shredded
1. Bring water to boil. Add rice, reduce heat to low, cover and cook for 5 minutes. Removed from heat.
2. In another pan, heat oil. Add chicken and ginger. Cook until chicken is no longer pink in the middle. Shred. Stir in the cooked rice, bell pepper, water chestnuts, broth, hoisin sauce, five-spice powder and salt. Cook until heated through.
3. To serve, spoon portions of the chicken mixture into lettuce leaves, top with heabs and carrot and roll into wraps.

Favorite Sloppy Joes
It's hard to find some good staple recipes (meatloaf, sloppy joes, etc), but these are good!
This is my own twist on sloppy joes, so let me know what you think!
1lb ground beef
1/4 c. onion
Brown and drain.
Mix in:
1 C. ketchup
1 (8oz) cans of tomato sauce (I have added an extra can to make it go further, BUT it changes the taste)
1/2 TB. vinegar
2 dashes of Worcestershire
1 tsp. mustard
1/2 tsp. garlic powder
3 tsp. brown sugar
s&p
Simmer. Serve over toasted hamburger buns.
*Make sure that you give these enough time to simmer and mix flavors. Nothing tastes worse than having sloppy joes that haven't blended!

These are quickly becoming a family favorite (minus child #2. he won't eat anything with red sauce!)
Another bonus: you can freeze them!
There are so many variations of these, but I usually take the easy way out and use premade spaghetti sauce...so sue me! :) If you want something more in depth..scroll to the bottom
9-10 Lasagna noodles
1 jar of spaghetti sauce
2 c. Cottage cheese
1/2 c. Parmesan Cheese
1 Egg (lightly beaten)
2 c. shredded mozarella cheese
1. Preheat oven to 375*
2. Cook the noodles.
3. Warm up spaghetti sauce
4. Mix cottage cheese, parmesan cheese and egg together.
5. Spread a small amount of the spaghetti sauce on the bottom of the pan. (Trust me. Do this step!)
Spread cheese mixture evenly over each lasagna noodle.
Roll up and place seam side down in the baking dish.
Top with remaining sauce.
Bake for 30-35 minutes. Abt. 5 minutes before the dish is finished sprinkle top with mozarella cheese.
Return and finish cooking, until cheese has melted.
**You can freeze these!

I love the idea of these..and they were GOOD too!
This recipe can be changed depending on how many people are eating.
Serves: 4
Ground beef (depends on how many are eating. you will be making hamburger patties) or ground turkey
4-5 Potato per person
Onion sliced
Seasoning- garlic powder, Lawry's Seasoning Salt, etc.
Pat of Butter
4 pieces of Heavy Foil
1. Preheat oven to 375*.
2. Shape ground beef into patties. Season well with seasonings.
3. Place each patty in the center of a piece of foil (abt. 15 inches long)
4. Place a few onion slices on top.
5. Place potato pieces on top of onion. Sprinkle more seasoning on top.
Add a bit of butter on top. (I omitted this part and put some ice cubes in to lower fat)
6. Fold all sides up to look like a hobo bag.
**SEAL TIGHTLY***
7. Cook for about 1 hour on the wire racks (I put them on top of a cookie sheet to lower the amount of mess to clean up.
We loved eating these with ketchup. Super yummy.
Variation: Put a couple of tablespoons of Broccoli Soup, etc. Adds flavor and a gravy.

Add a bit of butter on top. (I omitted this part and put some ice cubes in to lower fat)
6. Fold all sides up to look like a hobo bag.

7. Cook for about 1 hour on the wire racks (I put them on top of a cookie sheet to lower the amount of mess to clean up.
We loved eating these with ketchup. Super yummy.
Variation: Put a couple of tablespoons of Broccoli Soup, etc. Adds flavor and a gravy.

Wet Burritos
1 lb. ground beef
1/2 c. chopped onion
1 clove garlic, minced
1/2 tsp. cumin
1/4 tsp. salt
1/8 tsp pepper
1 (4.5 oz) can diced green chili peppers
1 (16oz) can refried beans
1 (15oz) can chili w/out beans
1 (10.75oz) can condensed tomato soup*
1 (10oz) can enchilada sauce
6 or more flour tortillas, warmed
2 c. shredded lettuce
1 c. chopped tomatoes
2 c. shredded Mexican blend cheese
1/2 c. chopped green onions
-Brown ground beef in a skillet. Add onion and cook until it is translucent. Drain grease and season with garlic, cumin, s & p. Stir in the green chilies and refried beans until well blended. Turn off heat, but keep warm.
-In a saucepan, combine the chili, tomato soup and enchilada sauce. Mix well and cook over medium heat until heated through. Turn off heat, but keep warm.
-Place a warmed tortilla on a plate. Put cheese on bottom, then meat mixture in the center. Top with lettuce and tomato. Spoon sauce over the top and sprinkle with more cheese and green onions.
-Put sour cream and salsa on top.
**I liked these...sort of. I didn't have the chili to add to the sauce. It probably would've made it better. if you DON'T have the chili, do NOT try just the tomato soup and enchilada sauce!! Just warm up the enchilada sauce and put on top.
*Also, there wasn't much flavor to the meat mixture. May need to add more flavor while cooking the meat.

Easy Ground Beef Casserole
1 to 1 1/2 pounds lean ground beef, browned
1/2 cup chopped onion
salt and pepper
3 large potatoes, sliced
2 Carrots, shredded
1 can cream of mushroom soup
1 cup shredded Cheddar cheese
Directions:
Brown ground beef in a skillet with chopped onions; cook until onions are tender. Drain off excess fat; transfer ground beef and onion to casserole dish. Add layer of sliced raw potatoes, sprinkle with salt and pepper; shred carrots to cover potatoes. Put soup over carrots. Bake at 350° for 40 to 50 minutes, or until potatoes are tender. Sprinkle shredded cheese over top and bake for about 5 minutes longer, or until cheese is melted.This easy ground beef and potato casserole serves 4 to 6.
Extra tidbit:
This was yummy! Luke loved it and he isn't one for casseroles. When I brown the beef I add extra spices (garlic powder, salt & pepper, onion powder, etc) and I think it adds some YUM factor.

Meatloaf (urs style)
1 lb hamburger
1 egg
chopped onions
salt / pepper
1/2 c. bread crumbs or saltines
Sauce:
Ketchup
Brown sugar
Directions:
Preheat oven to 350 degrees.
Mix meat, eggs, onions, salt and pepper, bread crumbs together. Make sure it is not too gooey.
Place in a pan.
Bake for 30 minutes until firm.
Mix together equal parts ketchup to brown sugar and pour over meatloaf for last 15 minutes.
Extra tidbits:
as you can tell, when I get a recipe from my mom, they are usually from her memory. Therefore there aren't a lot of measurements, more of a "feeling" So, check the meatloaf at 30 minutes, it may be done, it may not be. I prefer to cook it longer, just to make sure!

Iris and Terry's Goulash
This is a good, homemade, old fashion, take me back to the good old days meal. It is thick like a stew-esque type casserole and oh so good!
1 lb. hamburger
1/2 c. chopped onion
1 can tomato soup (DO NOT ADD WATER/MILK)
1-2 cans tomato sauce
2-3 c. macaroni noodles
1 TB. sugar
1/2 to 1 tsp chili powder
salt & pepper
1/4 to 1/2 c. Ketchup
dash or two of worcestershire sauce
Shredded cheese
Directions:
Brown gound beef and onion, drain. Add tomato soup and tomato sauce.
Cook macaroni noodles according to package in a separate container. Mix in the beef mixture. Add the sugar, chili powder, s&p, ketchup and dash of worcestershire.
Let simmer for the flavors to blend.
When serving put some shredded cheese on top.
Extra tidbit:
I usually cook the noodles at the same time I am cooking the beef. Otherwise, you have to wait another 10-15 minutes for the water to boil, etc. It cuts down on the time. I sometimes add more seasoning if I am feeling like spice. Start with what is in the directions and go from there!

Stir in taco seasoning mix, corn, beans, tomatoes and sauce.
Simmer 20 to 30 minutes.
Serve with shredded cheese on top and tortilla chips

1 TB. butter or margarine
1 (28oz) can tomatoes with juice, cut up
1 (4oz) can mushrooms w/stems (I usually omit because I hate mushrooms!)
1 (2 1/4 oz. can sliced ripe olives, drained
2 tsp. dried oregano
1 lb. hamburger, browned (ground beef)
12 oz. spaghetti, cooked and drained
2 c. cheddar cheese, shredded
1 can cream of mushroom soup
1/4 c. water
1/4 c. grated parmesan cheese
Directions:
Preheat oven to 350 degrees.
Saute onion and green pepper in butter until tender.
Add tomatoes, mushrooms, olives and oregano. Add ground beef. Simmer uncover for 10 minutes.
Place 1/2 spaghetti in a greased 9x13x2 in baking dish. Top with 1/2 vegetable mixture and sprinkle with 1 c. cheese.
Repeat layers.
Mix soup and water until smooth, pour over casserole. Sprinkle with Parmesan Cheese.
Bake uncovered for 30-35 minutes.
