Aunt Bertha's Rolls

To proof the yeast:

Mix 1 TB (or 1 pkg) yeast with 2 TB warm water and 1 tsp sugar
Let sit 5 minutes

Melt 1/2 c. butter in 1 c. scalded milk
Let cool.
Add yeast mix, stir thoroughly.

To this add and mix well:
1/2 c. sugar
3 eggs, well-beaten before adding
3/4 tsp. salt

Add 4 cups flour (measure-DON'T USE MORE)
Stir well.  Cover and allow to rise 5-6 hours.  (3 hour minimum)

Turn onto a lightly floured surface & knead 1-2 times to mix everything and make it easier to work with.

Divide dough into thirds & roll out about 1/8 in thick circles.

Brush with some melted buter, if desired & cut into 8 pie shaped pieces (as evenly cut as possible)
Place on grease cookie sheet, taking care not to crowd.  Let rise until big (usually takes 1-2 hours).

Bake at 400*?? till lightly browned usually between 8-12 minutes

Greek Turkey Taco Recipe Ingredients

  • 2 tbsp olive oil (divided)
  • 1 cup diced red onion (divided)
  • 4 cloves garlic (minced)
  • 1 lb ground turkey
  • 1 tbsp + 1 tsp Litehouse Instantly Fresh Oregano (divided)
  • 1 ½ tsp black pepper (divided)
  • 1 tsp kosher salt (divided)
  • ½ cup sun dried tomatoes
  • 1 cup cherry tomatoes (quartered)
  • 1 cup cucumber (diced)
  • 1 tbsp lemon juice
  • 2 tbsp red wine vinegar
  • 6 pita breads
  • ½ cup feta cheese crumbles
  • 1 tbsp fresh mint (chopped)
  • 1 lemon (sliced into 6 wedges)

Greek Turkey Taco Recipe Instructions

Heat a large skillet over medium-high heat. Once the skillet is hot, add 1 tbsp olive oil.
Saute ½ cup of onions in the olive oil for 4-5 minutes, add the garlic, saute 1 minute, then add the turkey.
Cook through, drain any grease, then add 1 tbsp oregano, 1 tsp black pepper, ½ tsp kosher salt and sun dried tomatoes. Simmer on low for 5 minutes.

Crazy Asian Salad & Chicken Satays

Salad:

Red peppers, blueberries, mangos, cucumbers, avocado, mint, cilantro, lime juice, pears (opt.) and could add dried roasted peanuts.

Add lettuce right before serving.

Dressing:
soy sauce, brown sugar, garlic, ginger, minced chives, fresh limes

Funeral Potatoes

6-8 medium potatoes
1/4 c. diced onions
1 can cream of chix (or celery)
1/2 of the soup can of milk
1 c. sour cream
S&P
3/4 c. crumbs
3 TB butter, melted
1 c. shredded cheddar

Preheat over 350*.
Cook potatoes, dice
Place potatoes in a greased 9x13 pan.
Saute onions in 1 TB. butter and spread over potatoes.

Combine soup, milk, sour cream, s&p to taste.  Mix well.
Spread sauce over potato/onion mix.
Sprinkle cheese.

Melt butter & combine crumbs.

Bake uncovered for 40 minutes or until hot & bubbly throughout.  325*??

Screaming Yellow Zonkers

1/2 c. white karo syrup
1 c. margarine
1 c. sugar
1 tsp. vanilla (or other flavor)
  *color if desired*
6 qts of popped popcorn, remove seeds


Bring to a boil & Pour over 6 quarts of popcorn. 
(*if you want it harder, bake at 200* in a larger roaster pan for 1 hour. Stir 2-3 times)

Perfect Chocolate Chip Cookies

Preheat oven to 350*.

In a bowl, combine flour, salt & baking soda. Set aside.
2 1/2 c. flour
1 tsp salt
1 tsp. baking soda

In a mixer, beat shortening & sugars until smooth.  Blend in vanilla & eggs.
1 c. butter or shortening (shortening preferred)
1 c. brown sugar (packed)
1 c. granulate sugar

1 1/2 tsp. vanilla
2 eggs

Add flour mixture gradually into sugar mixture,  until completely mixed.  Add chocolate chips.
2 c. chocolate chips

Drop on greased cookie sheet & bake until brown (about 10-12 min)













Allow cookies to remain on cookie sheet for 2 (up to 5) minutes.

Remove & place on wax paper until cooled.

Urs' rolls

Boil
1 c. water
1 c. butter

Add 3/4 c. sugar, 2 tsp. salt & 1 c. cold water.  Remove from heat and let it cool to "warm"

Dissolve 5-10 minutes
2 pkg yeast
1/2 c. warm water
4 eggs, beaten

Add to lukewarm mixture.  Stir briefly.

Stir together with 7 1/2 c. flour

Cover with lid.  Refrigerate.

Roll out to 1/2 in thick.
Let rise 4 hours.  Bake 400* for 12 minutes

Swedish Pancakes

My dad makes the best "Swedish Pancake".  Please don't confuse them with crepes.  They.are.swedish.pancakes.

My grandmother has a similar recipe, that is supposed to be easy to remember with a 6-5-4-3-2-1 ingredient list, but I never learned it...yet.

Here's dad's stuff:

5 eggs
1 cup milk
2 cups flour
1-2 TB sugar
1/2 tsp. salt
______________
+ 1 cup milk

1. Mix first 5 ingredients, until lumps are gone.  Add the 2nd cup of milk.
2. Heat pan until HOT--grease pan with oil
3.  Use about 1/3-1/4 c. of mixture.  Sit for a minute and flip (electric heat is NOT even)


1st time grease it up & it'll smoke.  1st pancake prepares the pan

**1/2 cup between medium and medium high abt 15 seconds

Nana's:
5 eggs 4 tsp. sugar (we only do 2), 3 cups milk 2 cups flour 1 tsp salt

Sweet & Sour Meatballs




15-20 Meatballs (can be bought frozen at Costco or Sam’s)
½ c. sugar
1 Tbls. cornstarch
20 oz can pineapple chunks, reserve juice
6 Tbls. vinegar
1 beef bullion
1 tsp. soy sauce
½ tsp. ginger
Rice


-In a 2 quart sauce pan, mix sugar and cornstarch well.  Stir in pineapple juice from the can and all other ingredients, except pineapple.  Bring to a boil.
-Add frozen meat balls and simmer for 15 minutes.  Add pineapple chunks and simmer for 5 more minutes.

-Serve over rice.

Easy Peasy Spaghetti Sauce

QUICK & EASY SPAGHETTI SAUCE
Ingredients:
1 small can of tomato paste
3 cloves of garlic chopped
1 tsp of Olive Oil
2 cups or more of water
1 tsp of onion powder
1 tsp salt
1/2 to 1 tsp of sweetener (I used Truvia)
1 tsp of Oregano
Directions:
Chop your garlic. Heat a pan with 1 tsp of olive oil. Saute the garlic in the oil. Add your tomato paste. Mix in your spices, salt and sweetener. Add water. Turn heat to low and simmer for at least 15 minutes or longer. 

Spaghetti Pie

INGREDIENTS
  • 1 box of angel hair noodles (Use Dreamfields if you're a Trim Healthy Mama!)
  • 4 eggs, or 1 cup of egg whites
  • ½ cup Parmesan cheese
  • 3 cups of shredded Mozzarella cheese, divided- you may use light cheese
  • 1 Tbls. onion powder 
  • 1 Tbls. garlic powder
  • 1 Tbls. Greek or Italian seasoning blend.
  • One recipe of your favorite spaghetti sauce to pour over the top.
INSTRUCTIONS
  1. Preheat oven to 350*
  2. Boil noodles according to package directions and drain.
  3. Whisk eggs, Parmesan, 2 cups of grated Mozzarella cheese, and all spices. together.  Add to noodles
  4. Pour into 9x13 casserole pan, and using a fork, press mixture down in the center, leaving a 1" unpressed border to hold the cheese.
  5. Spread cheese out over the center of your noodle pie.
  6. Bake for 12-15 minutes, until the cheese is bubbly and melted, and the noodles are 'set'.
  7. Serve with a big side salad, and hot sauce to top your spaghetti pie.
NOTES
You may halve recipe and press into a traditional pie plate for smaller families.
P.S. I've used Dreamfield's Pasta for over a year at least prior to starting Trim Healthy Mama, and we love it. It tastes no different than 'normal' pasta, and doesn't give me that 'carb crash' feeling after eating. It doesn't agree with everyone though. If you can't enjoy Dreamfields, please feel free to sub a spaghetti squash for the noodles in a half recipe.

Hawaiian Haystacks


Homemade Hawaiian Haystacks

8 tablespoons (1 stick) unsalted butter
1/2 cup all purpose flour
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

32 ounces reduced sodium chicken broth
1/2 cup sour cream
2 teaspoons of dry Ranch Dressing seasoning packet
1/4 teaspoon garlic salt
2 cups cooked shredded chicken breast
Steamed rice, enough for your family
Toppings:
Chow Mein Crispy Noodles
sliced green onions
black olives
pineapple
cranberries
almonds
tomatoes
shredded cheese
1. Place butter into a large saucepan over medium heat, stirring to melt. Slowly whisk in flour, salt and pepper until smooth and thick, for 1-2 minutes. Slowly whisk in chicken broth until smooth. Increase heat to high whisking until thick, about 2 minutes. Add sour cream, Ranch seasoning, garlic salt, and cooked chicken breast. Stir and season accordingly. You may prefer additional, salt, pepper and garlic salt. I transferred this to my crock pot and kept it on low all day until dinner. You can either serve it immediately or crock pot it until you are ready.
2. Place rice on serving plates and top with chicken gravy. Have toppings at the table and top with whatever you like! Have fun!
Makes 4 servings
Picky Palate

THM: use 1/2 c baking blend
Up the sour cream to about a cup
Add an extra tsp. Ranch
Add extra bouillon
