I really enjoy Shepherds Pie, so I was interested in trying this whole30 compliant recipe. It was really good! I’m going to say that the mashed potatoes aren’t over the top amazing because I didn’t add cream or butter, but still good.
Ingredients
beef mixture:
- 1 tbsp ghee for cooking
- 1 lb ground turkey *
- Sea salt and pepper (for seasoning beef
- 1 cup carrots diced
- 1 1/2 cup Brussels sprouts chopped
- 1 medium onion chopped
- 2 cloves garlic minced
- sprinkle of sea salt for veggies
- 3/4 cup beef or chicken bone broth
- 2 1/2 tbsp tomato paste
- 1 tsp fresh minced thyme *sprinkled over the mixture
- 1 tsp fresh minced rosemary*sprinkled over the mixture
mashed potatoes:
- 6-8 red potatoes*. I didn’t peel, just washed and cubes
- 2/3 cup full fat coconut milk blended prior to adding
- 3 Tbsp organic ghee
- 3 Tbsp nutritional yeast
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
prepare the potatoes:
- Cut and cube potatoes. Place in the bottom of the instant pot. Cover with water. Push manual and set for 5 minutes.
- After time, quick release. Drain and put back into instant pot. Add ingredients and blend with blender. Drain the potatoes and return to the pot. Set heat to low and add the ghee and coconut milk.
prepare beef mixture and assemble/bake pie:
- Preheat your oven to 375 degrees
- In electric skillet put cubed carrots and Brussel sprouts in some ghee. After a few minutes, add the defrosted ground meat. Brown meat. Add onions and cook until softened. Add garlic and sprinkle veggies with salt and pepper.
- Add the broth and tomato paste and spices and mix together meat and veggie mixture.
- Spray either 2 pie glass containers or 1 9x13 glass container. Layer meat mixture and then mashed potato.
