Chicken and Sausage jambalaya


2 chicken breast, cooked and chopped
1 sausage link
1/2 large onion, chopped
2 bell peppers, chopped (green and yellow)
3-6 slices of tamed jalapeños, chopped
1 can (14oz) of petite chopped tomatoes 
2 cloves garlic
3 c chicken stock
1 c instant brown rice, not cooked!  
2 tsp Cajun seasoning
1/8 tsp ground thyme

1.  Cook chicken in IP on poultry for 18 minutes (with 1-2 c water).  I forgot about the chicken (painting the bathroom) and came out 30 minutes later.  It tasted great!
2. Pour the water out and keep for chicken broth
3.  Add olive oil and chicken and sausage.  Sauté fir a few minutes
4.  Take out the meat and add the veggies.  Cook until the onions are soft and translucent.  
5.  Add 2 tsp of chicken bouillon to the chicken water.  
6.  Add chicken broth and different seasoning.  
7.  Add dry rice and simmer for 10-15 minutes.  
8.  Add meat back in and stir.  
Yum!
