Creamy Dreamy IP Chicken and Rice

Found the originally recipe on 40aprons.  I changed some of the steps to fit our family/time. I forgot to take a picture, but will try next time. 


THIS WAS DELICIOUS!!





3 Chicken breast, frozen
5 c. chicken broth 
1/2 onion, chopped
3-4 TB butter
3 TBS minced garlic
2 TB lemon juice
2 1/4 c. white rice, MUST be long-grain 
1/2 to 1 c. shredded parmesan cheese
salt and pepper to taste


1.  Place chicken and broth in IP.  Poultry setting for 22 minutes.
After done, take chicken and broth out 
2.  Change setting to saute and add butter.  Saute garlic and onion for a few minutes.
3.  Add rice.  I like to stir the rice with the butter mixture before adding the broth and lemon juice.  
4.  Change the setting to manual and put in 8 minutes.  Secure the lid.  After done, make sure you let it naturally release for 2 minutes (no longer).  Then quick release.
5.  Open lid and add in chicken pieces and paremesan cheese.  Stir well.
