High Altitude Chocolate Chip Cookies
Ingredients
- - 3 1/4 cups of all-purpose flour
- - 1 teaspoon baking powder
- - 1 teaspoon baking soda
- - 1 teaspoon salt
- - 2 sticks or 1 cup of salted butter, softened
- - 3/4 cup white sugar
- - 3/4 cup brown sugar
- - 2 eggs
- - 2 teaspoons vanilla
- - 1 cup milk chocolate chips
Instructions
- 1. Preheat oven to 350 degrees. If using a convection oven, preheat to 325 degrees.
- 2. Mix flour, baking powder, baking soda, and salt together.
- 3. In a separate bowl, beat the butter, sugar, and brown sugar together (2-3 minutes).
- 4. Add the eggs and vanilla to the butter mixture.
- 5. Add the flour mixture.
- 6. Lastly, add the chocolate chips.
- 7. Use a medium cookie scoop or 1 1/2 tablespoons of dough to form balls.
- 8. Bake the cookies for 10-11 minutes. Do not overbake:) Let the cookies cool 2-4 minutes on the sheet before removing.
- 9. Enjoy!

Instant pot THM Swedish Meatballs
I took 2 recipes and put them together. It was a pretty good meal, paired with Dreamfuelds pasta.
I used frozen meatballs, but you could make them easy enough.

- 4 ounces cream cheese
- 1 1/2 cups unsalted beef broth
- 1 cup heavy cream
- 2 tablespoons Brandy
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- I also added 2 TB of plain Greek yogurt after it was done cooking
- Manually set the Instant Pot to cook for 12 minutes, sealed.
- When there's 2 minutes of cook time remaining, carefully (using a kitchen hand towel - the steam is super hot!) release the steam valve to venting.
- Once the steam has completely released, carefully open the lid of pressure cooker away from you.
- Add sour cream or Greek yogurt. Serve over noodles

Oven baked fajitas in the Instant pot
8 frozen chicken breasts
1 can rotel
1 medium onion sliced
Prep all spices:
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp seasoned salt
Add half of the spices to the chicken mixture.
Turn on IP and hit Poultry 10 minutes.
After it is done, add the peppers and extra seasoning and put lid back on. Let it sit for a few minutes. (I put the peppers in for 1 minute and it turned them to mush. It is an experiment to only put it back in the pot. I'll let you know how it turns out.

1/2 green bell pepper, cut into strips
Eat on tortillas with sour cream and cheese. We even added extra salsa.
